Welcome to thehealthyavo! My name is Lexie, and I’m a plant-based food blogger who also dabbles in lifestyle content. (I can tell you how to make a tasty and healthy smoothie – but also where I got these shoes from.) My focus is to encourage a plant-based diet and lifestyle. Eating healthy doesn’t need to be boring or overwhelming!
I grew up in the northern city of Rockford, Illinois. I’ve always had a passion for all things creative. Growing up, I would ask for art supplies instead of toys. I would then spend hours painting or creating a new piece of artwork. But eating healthy did not always come easy to me. You could find Lexie the child snacking on Oreos and ramen all day every day. Being a competitive dancer and cheerleader (with the metabolism to prove it!) I could eat whatever I wanted, whenever I wanted.
It wasn’t until I turned 19, when I was living on my own and working full time, I realized that I wanted to make a change. I tried every diet under the sun, until I finally discovered a plant-based diet. I completely fell in love with this style of eating, but more importantly, I fell in love with how I felt. After changing to a plant-based diet, I have never gone back to my old ways of eating and I couldn’t be happier about it.
When the time came to decide what I wanted to do for college… I felt stuck. I knew I wanted to do something creative, but I disliked traditional school. After high school, I decided to move to Madison, Wisconsin, and begin beauty school. There, I discovered my passion for styling hair, obtained my cosmetology license, and decided to focus on bridal services.
Fast forward to today, and I continue to do weddings almost every weekend in the summer! My weekdays are then filled with me being creative in the kitchen. A lifelong dream of mine is to have an art studio that allows me to turn on my favorite music and simply craft all day.
The name “thehealthyavo” came from me wanting to eat as healthy as possible – I also really loved avocados! But now, the name means something completely different to me. I try to live each day as healthy as possible, whether that means salads and smoothies, or going out for pizza and sharing fries with my friends. Health isn’t just what you eat. It’s how you take care of yourself physically and mentally, all by creating your own balanced lifestyle. (I still love avocados; but I now think of myself as The Healthy Avo!)
What is thehealthyavo?
In just four words: it’s my food diary. But it’s so much more than that. thehealthyavo is a place that anyone from anywhere can come and take inspiration from. My Instagram, website, and photography are filled with bright colors, tasty looking food, and encouragement to live a balanced lifestyle.
I created thehealthyavo 4 years ago as a place to share my food creations. I had recently discovered a new passion for photography and plant-based eating and needed a place to share my work. My family was getting tired of being sent 20 photos of food a day, so I created a secret Instagram account – and @thehealthyavo was born!
I knew my account needed to be different and bridge a gap in the food blog world. The photographers who snapped the most beautiful photos had too complicated recipes. And the creators with everyday recipes didn’t have eye-catching photography. I knew I would be the one to fill this gap. My goal has always been to create beautiful aesthetic photos, but to keep the recipes achievable for anyone trying to make them.
At first, it was fun having @thehealthyavo be my little secret – I went a whole year without telling anyone besides my close friends and family about it. But as the account continued to grow, I knew I needed to be proud, and share my account versus hiding it.
thehealthyavo is one of my proudest accomplishments, and seeing people listen to my story and create my recipes brings me so much joy. This account is my little baby, and I’m so glad you are here to follow along.
