Vegan Creamy Tomato Soup

Who doesn’t love a classic grilled cheese and tomato soup? Nothing screams Fall to me like this delicious recipe. I make it every year and it always brings the warm and fuzzy feeling!

Serves: 4

Time: 1 hour

Ingredients:

1 yellow onion

1 garlic knob

5 large tomatoes 

Red pepper flakes

Fresh thyme 

Fresh basil

Olive oil

1/2 can coconut cream

1/2-1 cup veggie broth

Salt and pepper to taste


Directions: Add chopped onion, garlic, tomatoes, olive oil, basil, thyme, salt and pepper to a large baking sheet. Bake at 450 F for 30-40 minutes or until softened. Pour everything into a large pot with broth and coconut cream, blend with immersion blender or pour into an actual blender and blend till creamy. Season to taste and enjoy! I serve mine with extra basil, vegan Parmesan and a crispy grilled cheese.
