Pumpkin Mac & Cheese
My love for all things Fall meets my love for all things mac & cheese. This meal is so simple to make and tastes absolutely heavenly. Grab a blender and lets get to cooking!
Serves 4
Time: 20 minutes
Ingredients:
1 cup vegan ricotta
1 cup dairy free milk
1/2 cup pumpkin puree
1/2 cup nutritional yeast
1 garlic clove
1/2 tsp paprika
Salt and pepper to taste
Directions: Start by adding all of your ingredients to a blender and blend till smooth and creamy. If it's too thick add in more milk. Pour over cooked pasta and warm over a low heat. Either eat as is or throw in fresh veggies. Finish with a sprinkle of pepper and some red pepper flakes.
